Honey Cake

Pella — 3 cups all-purpose flour

2 teaspoons baking powder

1 1/2 teaspoon baking soda

1 cup sugar

1 cup honey

1 cup water

1/2 cup vegetable oil

3 eggs

1 teaspoon vanilla extract

3/4 cup chopped walnuts or pecans (optional)

1. Preheat oven to 350F. Lightly coat a 10-inch tube or Bundt pan with nonstick cooking spray.

2. Sift together flour, baking powder and baking soda.

3. Place sugar, honey, water, oil, eggs and vanilla in a large bowl. Beat with an electric mixer until well blended. Gradually add flour mixture and mix until thoroughly combined.  Fold in nuts, if using. Pour batter into prepared pan and bake until toothpick inserted in center of cake comes out clean, about 1 hour. Remove from oven, let cool.

Serves 16.
