Ground Beef Stew over Mashed Potatoes

Pella — 1 lb. ground beef

1 medium onion, coarsely chopped (1/2 cup)

1 bag (25 oz.) frozen mixed vegetables

1 can (14.5 oz.) diced tomatoes, undrained

1 jar (12 oz.) beef gravy

1/2 tsp. salt

1/4 tsp. pepper

8 biscuits (from 25-oz. bag) frozen buttermilk biscuits

1 box (2 pouches) Betty Crocker homestyle creamy butter mashed potatoes, prepared according to package directions

1. In 12" skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until thoroughly cooked; drain.

2. Add frozen vegetables, tomatoes, gravy, salt and pepper to beef mixture. Heat to boiling. Reduce heat to medium-low. Cover and cook 8 to 10 minutes, stirring occasionally, until vegetables are crisp-tender.

3. Heat oven to 375F. Bake biscuits as directed on bag.

4. Serve beef mixture over prepared potatoes with biscuits.
