Pella — 1/4 cup softened butter
4 cups mini marshmallows
1 cup heavy cream
2 cups sugar
1/8 tsp salt
3 cups white chocolate chips
1 tsp peppermint extract
colored sprinkles
1. Line a 9-by-13-inch pan with foil. In a saucepan, simmer butter, marshmallows, heavy cream, sugar and salt.
2. When smooth, stir in chocolate chips and peppermint. Blend well.
3. Spread in pan. Coat with sprinkles.
4. Cool; cut into squares (if you like, cut squares in half to make triangles).
As a variation, substitute vanilla for peppermint extract.
