Sugar Cookie

Pella — 1 cup soft butter

1 egg

1 cup sugar

3 cups flour

1 1/2 tsp vanilla extract

1/2 tsp baking soda

1/2 tsp salt

1. Mix all ingredients together in a mixing bowl. 

2. Form into a ball, adding a little flour if too sticky. Divide into two, wrap each in plastic and refrigerate over night (or if in a hurry at least 30 minutes).

3. Roll dough out on a flour-dusted surface to 1/2-inch thickness. Cut with cookie cutters.

4. Place cookies 2 inches apart on parchment lined baking sheets and bake at 350F for 10 to 12 minutes, rotating pans once.  Transfer to a wire rack to cool.  Decorate as desired.
